Frozen vegetables are a type of frozen food. They are made by processing fresh vegetables such as bell peppers, tomatoes, green beans, and cucumbers, then rapidly freezing them at extremely low temperatures to create small packaged products.

This processing method causes the moisture in the vegetables to quickly form regular and fine ice crystals, evenly distributed within the cells. The vegetable tissues remain undamaged, while internal biochemical processes are halted, preventing the growth of bacteria and mold.

Frozen vegetables are very convenient to prepare. Once brought indoors, they require no washing or cutting—only a brief thawing. Since most frozen vegetables are pre-blanched or steamed, and some may already be seasoned with salt or other flavorings, they cook quickly over high heat. Their taste, color, and vitamin content are nearly identical to those of fresh vegetables.

Frozen vegetables are not limited to single varieties. They are often blended from multiple types of vegetables, creating mixed combinations that offer balanced nutritional value and provide a more complete range of vitamins.
